This mushroom salad is a light and refreshing salad. A definite crowd pleaser.
1poundlarge button mushrooms(trimmed, cleaned and thinly sliced)
1/3cupfresh flat-leaf parsley(chopped)
1/4cupextra-virgin olive oil
1/4cupfresh lime juice
freshly ground black pepper(to taste)
1tsppowdered mustard(can use dijon but not the bright yellow stuff)
1/2red bell pepper(thinly sliced)
Thinly slice the mushrooms, red pepper and chop the parsley. Combine them in your serving bowl.
In a separate small bowl, whisk together the rest of the dressing ingredients except the Pecorino Romano.
Toss together all of the ingredients except the Pecorino Romano.
Just before serving, give the salad another toss or two. Sprinkle with Pecorino Romano, and garnish with a few parsley sprigs.
The quality of Pecorino Romano you use does make a difference. The cost of a good quality cheese may see prohibitive, but you are only using a small amount. That small amount is packed with flavor and really adds to the taste of this simple but flavor filled salad.
