Coconut Carrot Salad

  • 3 cups carrots (grated)
  • 1/2 cup fresh pineapple (minced or shredded)
  • 1/4 cup coconut shreds (unsweetened)
  • 1/8 tsp cayenne pepper (optional)
  • 1/4 cup raisins


  • Mix all ingredients thoroughly and let sit in your refrigerator for at least two hours.
  • OPTIONAL: Toss with a plain oil and vinegar dressing just before serving.


Pineapple: You can use either fresh (best) or unsweetened canned pineapple.  Try to get fresh if you can, it really makes a nice difference.
