This Thai Inspired Mandarin Salad only takes a few minutes to make. The bright taste of mandarin oranges is a surprising contrast to the pungent sesame oil in the dressing. Perfect for light snack, lunch or dinner.
Thai Inspired Mandarin Salad

Ingredients
- 4 cups romaine lettuce
- 1 cup cilantro (chopped finely)
- 1 can mandarin slices (drained)
- 1 onion (thinly sliced)
Dressing
- 4 tbsp tomato paste
- 6 tbsp soy sauce
- 2 tbsp sesame oil
- 2 tbsp peanut butter (Crunchy)
- 4 tbsp cilantro (Chopped)
- 1 tsp sesame seeds
- juice & zest of 1 lime
- 2 tsp red curry paste
- 1 tsp sichuan peppercorns (ground)
- 8 tsp rice wine vinegar
- 1 tsp red pepper flakes
- 2 tsp fish sauce
- 20 drops liquid stevia (to taste)
Instructions
- Tear romaine lettuce leaves into medium pieces.
- Combine the onion slices, chopped cilantro and lime zest. Toss.
- Combine all of the dressing ingredients in a jar. Shake until combined.
- Add the dressing and the mandarin slices, toss gently.
